Hasselback Potatoes
Named for the Stockholm restaurant Hasselbacken where it was first served, this dish is a different take on a baked potato. The slices of these potatoes open up during the cooking process, allowing cheeses to be added between the layers.

- Preheat oven to 375°F on Convection Mode.
- In a large sauce pan over high heat, combine water and butter; heat until butter melts and water boils.
- Add flour and salt and reduce to medium heat. Stir mixture until a thick paste forms. Remove from heat and let rest for 2 minutes.
- Add eggs and mix until dough becomes stiff and is no longer shiny.
- Add dough to a piping bag fit with a star piping tip. On a parchment-lined baking sheet, pipe into desired shape.
- Bake for approximately 20 minutes until golden brown and hollow when tapped on the bottom.
- Cool completely. Split open and fill with the filling of your choice.
