Named for the Stockholm restaurant Hasselbacken where it was first served, this dish is a different take on a baked potato. The slices of these potatoes open up during the cooking process, allowing cheeses to be added between the layers.

1 cup all-purpose flour

1 cup water

¼ pound unsalted butter

4 large eggs

Pinch of salt

  1. Preheat oven to 375°F on Convection Mode.
  2. In a large sauce pan over high heat, combine water and butter; heat until butter melts and water boils.
  3. Add flour and salt and reduce to medium heat.  Stir mixture until a thick paste forms. Remove from heat and let rest for 2 minutes.
  4. Add eggs and mix until dough becomes stiff and is no longer shiny.
  5. Add dough to a piping bag fit with a star piping tip. On a parchment-lined baking sheet, pipe into desired shape.
  6. Bake for approximately 20 minutes until golden brown and hollow when tapped on the bottom.
  7. Cool completely. Split open and fill with the filling of your choice.
